Here's one, give me an option when tailing a file. Define a search string to use during tailing. As each line is rendered in the display, if the search string is found, beep, or popup a dialog.

Not quite, but you can have it prompt you before the file is reloaded. Clicking OK is the only option on the prompt so it's always reloaded eventually.
